Guava Recipes

It was quite the surprise when we arrived: a huge Guava (they call them Guayaba’s here) tree full of fruits? But what to do with them?

We’ve got some recipes for you!

Cookies with Guava Jam

What you need for the jam

Guava’s, 500 grams

Filtered water

Natural or organic cane sugar (about 500 grams, see in recipe)

Agar agar

What you need for the cookies

200 gr self-raising flour

100 gr cane sugar

egg replacer for 1 egg

100 gr plant-based butter

couple of tbsp of guava jam

Flower to pollinate

Now let’s make them!

You’ll need two days: your jam needs to cool down. Let’s start with that.

Cut off the ends of your guava’s and cut them in quarters. Cut away brown parts too. No need to peel them, because the peel is edible. Put them in a big pan and cover them with water. Boil for twenty minutes.

Remove the pan from the heat and puree the guavas. Now we are going to sift out the seeds: they are so hard (even after cooking) that you can break your teeth on them.

Gradually pour the puree into the sieve and use a wooden or rubber spoon to mix the remains in the sieve.

There you go, now your guava juice is ready to make a jam.

Weigh how much juice you have. Add the same weight of cane sugar. We are now going to let this mixture thicken further to a desired thickness. Put on the fire and let it boil. Note: the agar agar will stiffen your jam even further.

When your mixture has thickened enough, add the agar agar. Mix well until everything is incorporated.

Now remove the pot from the heat and immediately fill into jars. Put the lid on and turn briefly. Let cool.

Now let’s bake some cookies!

You can of course also eat your jam as is. But it's even better on these cookies!

Preheat the oven to 180 degrees. Line a baking tray with baking paper. Cut the butter into small pieces and mix with the sugar and flour. Knead with a mixer with dough hooks or with your hands to a crumbly dough. Then knead in the egg replacer to a smooth dough. Dust the work surface with flour and roll out the dough to about 5 mm thick. You might need quite some flower, as this is a sticky dough!

Cut out shapes and place them on the baking tray. Make a small well in the center with a spoon or with your finger and spoon in a some guava jam. Make sure you leave enough space between the cookies because they will expand in the oven. Bake the cookies for 10-12 minutes until light brown. Let them cool on a rack.

They’ve made a Salsa out of it, which works perfectly with your plant-based ice cream and is made in no-time!

What you need

500g guava

200ml water

200g sugar.

Juice of 1 lemon

How to make the sauce / salsa

Cut away the ends of your guava and cut into quarters. Bring to boil. Lower the heat but continue to boil for at least another 10 minutes. Strain and chill in the fridge.

Serve with ice cream!
